Ingredients

  • Chicken breasts, sliced3 (600g)
  • Bell peppers, sliced3 mixed colors
  • Red onion, sliced1 large
  • Fajita or taco seasoning2 tbsp
  • Small tortillas8
  • Lime1
  • Olive oil1 tbsp

Method

    Toss the chicken with the seasoning and oil while the pan gets screaming hot.

    Sear the chicken 5-6 minutes until charred at the edges, then tip onto a plate.

    Same pan: peppers and onion, 5 minutes, until soft with dark spots. Chicken back in, lime over everything.

    Warm the tortillas and put the pan in the middle of the table. Let the kids build their own - they eat more that way.
