Ingredients

  • Chicken thighs, boneless8 (800g)
  • Baby potatoes, halved500g
  • Broccoli, cut into florets1 head
  • Red bell peppers, chunked2
  • Olive oil2 tbsp
  • Smoked paprika, garlic powder, oregano1 tsp each

Method

    Oven to 220°C. Line your biggest tray with parchment - that's the cleanup handled.

    Toss potatoes with half the oil and seasoning, spread out, and give them a 10-minute head start.

    Toss chicken, broccoli and peppers with the rest of the oil and spices, add to the tray.

  4. 4

    Roast 25 minutes until the chicken hits 75°C and the edges char. Serve straight off the tray.
