Ingredients
- Chicken thighs, boneless8 (800g)
- Baby potatoes, halved500g
- Broccoli, cut into florets1 head
- Red bell peppers, chunked2
- Olive oil2 tbsp
- Smoked paprika, garlic powder, oregano1 tsp each
Method

Oven to 220°C. Line your biggest tray with parchment - that's the cleanup handled.

Toss potatoes with half the oil and seasoning, spread out, and give them a 10-minute head start.

Toss chicken, broccoli and peppers with the rest of the oil and spices, add to the tray.

Roast 25 minutes until the chicken hits 75°C and the edges char. Serve straight off the tray.
