Ingredients

  • Chicken breasts, halved lengthways4 (800g)
  • Sun-dried tomatoes, chopped1/2 cup (75g)
  • Baby spinach3 big handfuls (90g)
  • Light cream cheese150g
  • Chicken stock1 cup (250ml)
  • Garlic, minced4 cloves
  • Parmesan, grated1/3 cup (30g)

Method

    Season the chicken and sear 4-5 minutes a side in a wide pan until golden. Set aside.

    Same pan: garlic and sun-dried tomatoes for 1 minute, then stock, scraping up the browned bits.

    Stir in cream cheese and parmesan until smooth, then wilt in the spinach.

    Chicken back in, simmer 5 minutes. Serve with rice, pasta or crusty bread to mop the sauce.
