Ingredients

  • Salmon fillets4 (500g)
  • Baby potatoes, halved500g
  • Green beans, trimmed300g
  • Cherry tomatoes250g
  • Olive oil2 tbsp
  • Lemon1, in wedges
  • Garlic, sliced3 cloves

Method

  1. 1

    Oven to 200°C. Toss the potatoes with half the oil on a lined tray and roast 12 minutes first.

    Add beans, tomatoes and garlic, then nestle the salmon on top. Oil, salt, pepper over everything.

    Roast 15-18 minutes until the salmon flakes with a fork.

    Squeeze lemon over the whole tray and carry it to the table. One tray, four plates.
