Ingredients

  • Eggs12 large
  • Large flour tortillas8
  • Black beans, drained1 can (400g)
  • Cheddar cheese, grated1.5 cups (150g)
  • Breakfast sausage or bacon, cooked and chopped250g
  • Salsa1/2 cup

Method

    Scramble the eggs soft - slightly underdone, they finish cooking on reheat.

    Lay out the tortillas and split eggs, beans, meat, cheese and salsa down the middle of each.

    Fold in the sides, roll tight, and wrap each one in foil or parchment.

    Freeze in a zip bag. Reheat: unwrap, damp paper towel, microwave 2-3 minutes. Fridge ones take 90 seconds.
